Amatriciana is a classic Roman pasta recipe of diced guanciale, or pancetta, sauteed with chopped onions, a pinch of red pepper, and a splash of dry white wine. It can be a Red Amatriciana by adding ripe tomatoes or white  "Amatriciana in Bianco" by increasing the pan sauce with a little more romano cheese and pasta water

We offer penne pasta but traditionally is tossed with bucatini pasta,
a thicker spaghetti with a hole going through it. 


Ingredients: high protein imported pasta, tomatoes, uncured bacon, onions, white wine, mozzarella & Romano cheese EVOO, a pinch of cayenne pepper & sea salt.

Reheating Tips:
Microwave:  in a microwaveable dish with a spoonful of water for 2 to 3 minutes on medium or to the desired temperature.  
Oven at 375° F. In an oven-proof dish and heat up to the desired temperature.
