Amatriciana is a classic Roman pasta recipe of chopped onions, diced guanciale, or pancetta, sauteed with a pinch of red pepper and a splash of dry white wine it can be a Red Amatriciana by adding ripe tomatoes or white "Amatriciana in Bianco" by increasing the pan sauce with a little more romano cheese and pasta water.
We offer penne pasta but traditionally is tossed with bucatini pasta,
a thicker spaghetti with a hole going through it.
Ingredients: high protein imported pasta, tomatoes, uncured bacon, onions, white wine, mozzarella & Romano cheese EVOO, a pinch of cayenne pepper & sea salt.
